To celebrate International Waffle Day (yes, theres a DAY!) on March 25th, I made these Rainbow Waffles. They’re super easy and so so beautiful, and the little “pot of gold” at the end of the rainbow and fluffy ice cream clouds makes them not only delicious to eat, but super cute to serve to your guests as well!
60g / 2oz butter, melted (I used salted butter, but you can use unsalted and just add a pinch of salt to this recipe)
340g / 12oz plain / all-purpose flour
3tsp / 4g or 1/8oz baking powder
30g / 1 oz superfine or caster sugar
11oz / 315g (ml) milk
2 large eggs
Optional – cinnamon or nutmeg (or both! to taste)
Food colours – I used red, green, blue and yellow
Non stick spray
5 x zip lock bags
Whipping cream or vanilla ice cream
A waffle maker or waffle iron – (A round waffle maker works best for the rainbow effect, but any will do)
Preheat your waffle iron – I used the lightest browning setting as I didn’t want to ‘brown out’ my rainbow colours
In a large bowl, combine flour, baking powder sugar and salt (if using) – stir till well combined.
In another bowl, beat together milk and eggs.
Add to dry mixture and use a whisk to thoroughly combine the ingredients.
Once combined, add melted butter, vanilla and spices and continue mixing till mixture is smooth.
Divide your batter into 5 bowls – place a little less batter into your bowls for the centre colours (blue and green) and a little more into the bowls for the outer colours (red, yellow and orange)
Add enough food colouring to create vibrant batter colours and stir well to make sure the colour is thoroughly incorporated.
Place each batter colour in to a clean zip lock bag and snip a corner off the bag to create 5 x makeshift piping bags.
Spray your waffle maker with non stick spray and apply a circle of blue batter into the centre, about 4cm diameter.
Use your green batter to draw a ring around the blue, then repeat with yellow, orange and finally red
Close your waffle maker and allow to cook (approx 2 – 2.5 minutes)
Remove and cut your waffle in half.
Serve immediately with whipped cream or ice cream scooped into clouds and a pot of maple syrup “gold”
